This is one of my husband’s favourite recipes. It is simple, fast to prepare and it’s very tasty. In my version this recipe contains eggs and cheese which makes it inapropriate for vegans, but of course if you’re a vegan you can spare the eggs and use tofu instead of cheese. 🙂
What you need:
Potatoes – 8 potatoes for four dishes;
Peppers – 3 peppers;
Tomatoes – 2 tomatoes
Onion – 1 head
Cheese – by taste
Eggs – 4 eggs
Boil the potatoes. Cut them in cubes. Slice the peppers and the onion in small parts. Boil them in a separate pan.
Start filling the pots. Put a single drop of oil at the bottom. First, put a tomato bed inside. Than put the potatoes, than the cheese. Cover them with the boiled veggetables. Place a single egg on top.
Put the pots with the top on in the oven at 220 degrees celsius and let them bake for about 15-20 minutes.
